Bacon Wrapped Baby Peppers stuffed with Bocconcini

(Makes 24)

Ingredients

  • 12 small baby peppers or pepperdews
  • 12 rashers streaky bacon
  • 250 g bocconcini cheese, drained.  This is found in delis and deli sections of supermarkets.  They are small balls of rolled mozzarella cheese.  Can substitute with feta.
  • garlic salt

Method

Slice peppers in half, top to bottom and scoop out the seeds and membranes with a teaspoon.  Place a little ball of cheese in each hollow and wrap in half a rasher of bacon.  Lie them cut side up in a small roasting dish and sprinkle with garlic salt.  They can be prepared to this stage and stored in the fridge.

To cook, either bake at 200°C or place under a grill or on a BBQ plate until the cheese is bubbly and browning and the bacon crispy and cooked.  Serve warm.
