Basic Yeasted Bread

  • 500g flour – 50% stoneground wheat/50% stoneground white
  • 10g fresh yeast/8g dried yeast
  • 12g salt
  • 370g water


Basic Yeasted BreadAdd all dry ingredients, including crumbled fresh yeast into the bowl, then add water.

Mix and knead for about 10 mins, or until dough is supple. Leave dough for around 1 hour in a warm place covered with a damp tea towel to double in size.

Preheat oven to 250°C.

Shape as you wish and leave for approx 20 mins until approximately doubled in size, before baking.

Turn oven down to 230°C, and bake your bread. Spray oven or place water in bottom of oven to create steam.

  • Loaves and boules approx 20-25 mins
  • Baguettes approx 15 mins
  • Rolls approx 12 mins
  • Pita Bread approx 5 mins
