Chicken with Feta & Pesto

  • 500g chicken (cubed)
  • 50-100g pesto
  • 150ml cream
  • 1/2 cup olives or sundried tomatoes
  • 125g Wild Bush sheep feta
  • 1 clove garlic


Gently fry the garlic in oil until fragrant.  Add the chicken and fry until golden.  Put chicken into an oven proof dish, add all the other ingredients.  Bake at 180 C without a cover for about 20 minutes or until the top is golden.  Serve with a salad.
