Chilli Con Queso
- 1 small onion, minced
- 1 clove garlic, minced
- juice of 1 lime (or lemon)
- 1/4 cup water
- 6 tbsp sour cream
- 250g cream cheese
- 10 slices of pickled jalapeno
- 2 cup grated cheese
Place onion, garlic, lime and water in a small saucepan and bring to the boil. Turn down and cook slowly for 5 min.
Remove from heat and add all remaining ingredients. Blend with stick blender (or in a food processor) until roughly combined.
Use in Mexican lasagna or use just like this as a dip wth cornchips.
