Christmas Mincemeat

For 3-4 cups

Ingredients

  • 400 g sultanas
  • 400 g mixed fruit
  • 3 small apples
  • rind and juice of 1 lemon
  • rind only of 1 orange
  • 1 cup brown sugar
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 1 tsp salt
  • ½ tsp ground cloves
  • ½ tsp grated nutmeg
  • ¼ cup brandy, whisky or rum

Method

Mince sultanas, mixed fruit and unpeeled but cored apples.

Add grated lemon and orange rinds to minced fruit, with the lemon juice.

Add sugar, spices and alcohol and mix thoroughly.

Spoon into clean jars, cover, and keep in the refrigerator (up to 18 months), or in a cool, dark place (up to 3 months), until needed.
