Citrus Salt

Base – 100g golden salt

  • 30g Sugar
  • 1 Lime                 
  • 1 Orange                
  • 1 Lemon                
  • 4 Coriander seeds         
  • 2 Peppercorns            


Place the salt and sugar in a mortar, zest the fruit over the salt and sugar mix making sure you capture all the spray and oils released by the fruit. Add the coriander seeds and the peppercorns, pound with pestle until crushed and aromatic
