Colleen's Hot Cheese Spinach Dip

1:35 am on 30 September 2006

Ingredients

  • 1 tbsp jalapeños (in jar from the supermarket)
  • 1 large onion, chopped
  • 2 C chopped tomato (or the contents of 2 tins)
  • 280 gms frozen spinach, squeezed out and dried as much as possible
  • 250 gms cream cheese
  • 2 C tasty cheese, grated

Method

Mix all the ingredients together and put in an oven proof dish. Bake for one hour at 200ºC.

NB: Using tinned tomatoes and frozen spinach makes this a very quick dish that takes less than 10 minutes to put together. If using tinned tomatoes, pour out some of the juice. When using frozen spinach, it’s important to thaw it and squeeze it out to be as dry as possible, again to reduce the water content of the dip. Add some extra cheese if the mixture looks too wet.
