Double Chocolate Mascarpone Brownie

Ingredients

  • 150gms butter
  • 150gms mascarpone
  • 6 eggs
  • 500gms sugar
  • 160gms cocoa
  • 125gms flour
  • 1 tsp baking powder
  • 300gms chocolate chips

Method

Melt butter.

Blend eggs, sugar, mascarpone, butter and cocoa till smooth and glossy - about 5 minutes.

Add flour, baking powder and chocolate chips.

Bake at 150ºC for 30 minutes.

Remove from the oven and cool, will keep in the fridge for up to 10 days.

Later comment from Peter:

Mascarpone add with the butter.
For the bake time it is 30 minutes in a commercial oven but 1 hour in a domestic oven.
Use 30cm by 15cm by 3cm deep dish.
