Fiji Coconut Pie
2 cups milk
1 cup sugar
1 cup dessicated coconut (freshly grated or supermarket bought) and you can lightly toast your coconut if you like.
½ cup melted butter
½ cup plain flour
2 teaspoons vanilla
Whisk them all up till sugar is dissolved & pour into your greased casserole dish & into a 170 degree oven for approx. 40 minutes.
(I use my finger gently in the middle to see if it has set). The flour & butter will go to the bottom , forming a lovely soft base, eggs, vanilla & milk form the centre custard and the coconut will rise to form the topping.
Serve hot or cold with ice cream or whipped cream
You can spring over caramelized grated coconut & raw sugar if you like.
