Irish Stew with Stout
- kg topside steak - cut into hunks
- 1 tbsp olive oil
- kg sliced onions
- large carrots sliced
- large sliced parsnips
- ½ litre beef stock
- 2 tbsp flour
- small bottle of stout
- cloves garlic sliced
- tbsp fresh thyme chopped - plus extra for garnish
- zest of either a lemon or orange
- 2 tbsp dark molasses
- ½ tsp salt
- lots of freshly ground black pepper
big casserole dish.
Coat meat in flour then quickly fry on both sides- might need to do it in batches.
Transfer meat to a cooking dish.
Add all other ingredients to dish.
Pop into oven and cook 170 for a couple of hours.
