Italian Style Bread and Tomato Salad

Italian Style Bread and Tomato SaladIngredients

  • ½ baguette, preferably stale
  • cold water
  • 8 leaves basil
  • 4 tomatoes, cubed, seeds removed
  • 1 red onion, finely sliced
  • ½ telegraph cucumber, peeled and diced
  • 2 cloves garlic, chopped
  • 1 tbspn chopped parsley
  • 2 tspns red wine or sherry vinegar
  • 4 tbspns olive oil
  • 2 hard-boiled eggs
  • salt and freshly ground black pepper

Method

Dip the bread briefly into cold water then tear it into pieces. The bread should be damp and not soggy. Add the basil, tomatoes, onion, cucumber, garlic, and parsley. Sprinkle the vinegar and olive oil and toss well and then adjust the seasoning. Let the salad sit for 30 minutes before serving and then dress with the eggs to garnish.
