Kaanga Wai (Fermented Corn)

What I was told is that you get cobs of maize or corn and put them into a sack then you tie the sack up tight and then lay the sack of corn in a stream of flowing fresh water. This is left there over a length of time until you can see that the kernels are ready to be taken of the cobs. Once the kernels have been taken off, you then cook in a pot (the smell is something you have to get used to).

Once cooked then you can eat it on its own or add sugar and cream it depends on your taste. It's like porridge. I've been told its lovely!
