Lemon Icing

This simple lemon icing is perfect for drizzling on cakes of all flavours, but is especially good with ginger, banana, berry and coconut concoctions.


  • 100g icing sugar, sifted
  • 2 teaspoons lemon zest
  • 1 tablespoon lemon juice


Mix the icing sugar and zest together and gradually add the lemon juice, mixing to form a smooth and runny icing suitable for drizzling.
