Mint and Kiwifruit Chutney

Ingredients
- approximately 3.75 kg kiwifruit, skinned and sliced
- 900 g onions, skinned and sliced
- 1.4 kg apples, skinned and sliced
- 1.5 litres vinegar
- 2.2 kg brown sugar
- 1 packet mixed spice
- 2 tablespoons salt
- 1 small teaspoon cayenne pepper
- 3 cups sultanas, added late in boil
- mint, chopped finely
Method
Boil all together for about an hour. Bottle into warmed jars and seal. A teaspoon of ground ginger added 10 minutes before the end of boiling will bring out the flavour.
