Prebiotic and Probiotic Kumara Leek Soup

The gut microbiome can play a big role in how the body responds to foods. This recipe is an example of how to include foods that feed the gut microbiome (prebiotics) and introduce some beneficial bacteria (probiotics) into the mix.

Ingredients

  • 1 leek, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 750g kumara, diced
  • 2 cups broth
  • 1 cup water
  • 2 tsp ground turmeric
  • 2 tsp chopped fresh tarragon
  • salt and pepper to taste
  • 1 cup plain yoghurt, to serve

Method

Heat oil in large saucepan and cook leek and garlic until soft and golden, about 5 minutes.

Add kumara, broth, water and seasonings and bring to a boil. Simmer until kumara is soft (30 minutes).

Mash soup in the saucepan, or transfer to food processor and blend until smooth.

Serve with a dollop of plain yoghurt and more fresh tarragon.
