Raw Energy Salad

  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • 2 teaspoons cumin seeds
  • 1½ cups microgreens — red cabbage, Rambo radish and purple basil are good colour choices
  • 1 raw beetroot, peeled and grated
  • 1 large raw carrot, grated
  • ¼ red cabbage, finely shredded
  • ½ red capsicum, finely sliced
  • ½ red onion, finely sliced
  • 1 teaspoon black sesame seeds
  • 1 cup cooked quinoa (red if possible)


Combine all the seeds.

Lightly toast in a frying pan over a medium heat, stirring continuously.

Combine cooled seeds with all other ingredients and toss.

Drizzle Pomegranate Dressing over the salad and serve.
