Raw Energy Salad
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- 2 teaspoons cumin seeds
- 1½ cups microgreens — red cabbage, Rambo radish and purple basil are good colour choices
- 1 raw beetroot, peeled and grated
- 1 large raw carrot, grated
- ¼ red cabbage, finely shredded
- ½ red capsicum, finely sliced
- ½ red onion, finely sliced
- 1 teaspoon black sesame seeds
- 1 cup cooked quinoa (red if possible)
Combine all the seeds.
Lightly toast in a frying pan over a medium heat, stirring continuously.
Combine cooled seeds with all other ingredients and toss.
Drizzle Pomegranate Dressing over the salad and serve.
