Savusavu Beef Kovu
This should make one good sized parcel/bundle of Kovu.
500g steak, cubed
2 medium tomatoes, sliced
1 medium onion, sliced
1 teaspoon salt
1 teaspoon sugar
2 cloves garlic, crushed
1 very small chilli, chopped (optional)
1 1/2 to 2 cups lolo (coconut cream - not coconut milk)
Combine all and carefully place in your prepared banana leaves, I prepare my leaves by wafting them over an open fire to soften.Otherwise they will crack & you will lose all the juice.(if you don't have banana leaves, just wrap everything in a foil parcel) I place a plate or rack in a big pot & steam. If you can do it over an open fire out the back...great!
If you have a more sophisticated steamer, by all means use it.
Simmer or steam for about 2 hours
