Spotted Dick Pudding

Ingredients

  • 110g  raisins
  • 110g currants
  • 80g soft brown sugar
  • ½ teaspoon cinnamon
  • grated zest of 1 lemon
  • 325g  self raising flour
  • 160g suet 
  • 2 eggs
  • a pinch of salt
  • 300ml milk

Method

Mix the raisins and currants with 2 tablespoons of the flour till they are well coated. Add the sugar, cinnamon and zest. 

Sift the flour into a mixing bowl, add the suet, the salt and rub together to form breadcrumbs. Add the eggs and milk, mix till a soft elastic dough starts to form, then add in the fruit.

Cook the Spotted Dick either in a pudding bowl or wrapped in a cloth napkin by carefully steaming for 2 hours and then serve hot with lashings of custard.  You may wish to loosely wrap the pudding in tin foil and gently bake it in the oven for 1 - 1.5 hours.
