Whole Poached Chicken

Ingredients

  • whole 1.5kg chicken
  • small handful fresh thyme
  • ½ a lemon
  • 2 bayleaves
  • 1 small onion
  • 2 spring onions
  • 3-4 whole star anise.

Method

Very gently simmer the whole chicken for exactly 25 minutes, using enough liquid to cover the whole bird by about 3cm. Again, leave to cool in the cooking liquid with the lid on. The chicken flesh will be pink around the thigh bone, but it will be cooked.
