Anthropologist Dr David Boarder Giles has been investigating our cultural relationship to food consumption and wastage and he says the trash talks. What what we throw out tells us about our cultural relationship to food consumption and wastage, revealing a lot about our attitude to food and what we value over what we throw away.
Part of his work examines the cultural-economy of waste in global cities and looks at what we can do to change our habits and redistribute the foods that would otherwise end up being dumped. It covers what supermarkets throw out and why, dumpster diving, feeding the homeless and soup kitchens... also the prejudices of consumers that drive commercial waste.
Dr David Boarder Giles is an adjunct Lecturer at the University of Canterbury and he is currently teaching at the University of Washington in Seattle.
