Pink Grapefruit and Prosecco Granita

(Serves 6)

Ingredients

  • ⅓ cup water
  • ½ cup sugar
  • 2 ½ cups pink grapefruit juice
  • ½ cup Prosecco, Asti Spumante or other slightly sweet sparkling wine

Method

Combine the water and sugar in a saucepan and stir over a medium heat until the sugar is dissolved. Bring to the boil and simmer, without stirring for 4 - 5 minutes. Cool and add the grapefruit juice and wine.

Transfer to a shallow container and place in the freezer. When it has started to freeze around the edges, remove and, using a fork, break up the ice crystals. Return to the freezer, and repeat the stirring every half hour or so until almost solid. Before serving, use a fork to fluff up the ice crystals.
