Meet New Zealand's answer to Jamie Oliver - Paul Hutt.

Living and working in Siem Reap, Cambodia for the past 3 years, Chef Paul has set up a cooking school to teach underprivileged Cambodian children to become chefs. Some of the kids come from the rubbish dumps of Phnom Penh, some off the streets of Siem Reap.

Paul's also helping find ways to increase the supply of fresh farm produce to the local tourist hotels.

After Paul Hutt set up the cooking school, he went on to establish the kitchen, restaurant and café in Hotel de la Paix, a five star boutique hotel, which is rated in the world's top twenty.

Paul hopes that by paying high prices and creating demand for local product, the chefs he's trained will develop a sense of pride in their native cuisine.
