Basque Cheesecake with Quince

Serves 6

Ingredients

  • 500g cream cheese
  • 160g caster sugar
  • a pinch of salt
  • 2 eggs
  • 1 egg yolk
  • 10g plain flour
  • 250 ml cream
  • 60g quince paste (about 3 tablespoons)

 

Method

Pre-heat oven to 180˚C.

Grease and line a 25cm cake tin with baking paper, making sure it comes right up the sides, or line individual moulds instead.

In an electric bench top mixer, using the paddle attachment, beat the cream cheese with the sugar and salt until smooth. Add the eggs and beat again. Mix the cream in gently - you don't want to whip it, sift in the flour and stir to combine.

Smooth the quince paste over the bottom of the cake tin. Pour in the batter then put the cake into the oven for 40 minutes (or 20 if using individual moulds). the cake should be golden brown on top and still a bit wobbly in the middle. Cool to room temperature. Sift with icing sugar if you wish before serving
