Garlic Bread

Ingredients

  • 1 large French stick
  • 1 head of garlic, peeled and crushed
  • 250g butter, softened
  • 1/2 cup chopped fresh parsley
  • juice and zest of 3 lemons
  • salt
  • pepper

Method

Preheat oven to 200°C

Slice the French bread into rounds. Beat the garlic, lemon zest and parsley into the softened butter. Gradually mix in the lemon juice adding as much as it will absorb (there may be some left over). Add salt to taste.

Spread the butter mixture (generously) onto the rounds of bread and place on a baking tray in preheated oven. Bake for 5 – 10 minutes according to how soft or crisp you like the bread. (Alternatively wrap in tin foil in the usual way and bake for longer) Finish with freshly ground black pepper.
