Scrummy Easy Lemon Curd

Ingredients

  • 150g sugar
  • 2 tsp corn flour
  • juice and zest of three medium juicy lemons
  • 5 egg yolks
  • 75g butter

Method

Combine sugar, corn flour, lemon juice, lemon zest and egg yolks.

Gently stir together with a hand whisk. Make sure no air is whipped into the mixture.

Set over a saucepan of simmering water and gently whisk until the mixture thickens; add the butter halfway through and continue to whisk.

This should take approximately five minutes. Avoid creating scrambled eggs by not allowing the mixture to get too hot.

Once the curd has thickened cover with plastic wrap and refrigerate.
