Steamed Fish in Banana Leaf

5 large Fish Fillets
10 pieces of banana leaf
Large Pan of boiling water


Marinade
2 red chillies
zest and juice of 2 limes
1 stalk lemongrass finely minced
4 spring onions, finely chopped
3 cloves garlic, minced
4 teaspoons sesame oil
2 teaspoons caster sugar (optional)
2 teaspoons fish sauce
salt and pepper


Preheat the oven to 180C

Process the marinade ingredients in a food processor or in a pestle and mortar.

Take your fish fillets and chop into chunky cubes - make sure you have removed any bones!
Place the cubed fish into a shallow dish and cover with the marinade.  Toss to coat.  Leave for a few hours if possible - even 20 minutes will do the trick!

Take a banana leaf and dunk into the boiling water using tongs.  Dry with a clean tea towel.

Place a mound of fish in the centre of your banana leaf.  Fold over the banana leaf and create a parcel.  Secure with a toothpick.

Once you have all your parcels of fish ready, pop into the oven for 15 minutes to cook.

Tips:
You can cook on a BBQ or under a grill also.
You can make your parcels up in the morning and keep in the fridge until you are ready to cook.
