Orange and Honey Vinaigrette

Ingredients

  • 1 orange
  • 1 tbsp runny honey
  • 1 tsp finely grated ginger
  • 6 tbsps (100mls) avocado oil
  • 1 tsp salt
  • Freshly ground black pepper
  • 2 tbsps fresh mint leaves, finely chopped

Method

Finely grated the zest and squeeze the juice of the orange. Place this in a screw top jar with all the other ingredients. Shake really well together. Store in a screw-top jar for 1-2 weeks.

This dressing goes particularly well with any salad that has fruit in it, as the lack of vinegar and the sweetness of the orange and honey really complement chunks of papaya, mango, pineapple, apple, pears, figs and peaches. It is superb with tomato and avocado salads.

Makes half a cup.
