Fern fronds and tree fungus may rise in culinary popularity when a new cookbook is published this year.
Chef Charles Royal from Te Arawa has just completed the manuscript for a book on how to source and prepare traditional Maori kai, to be published by Huia in October.
He's collected the recipes over the years from kaumatua and from family.
He told Waatea News the book is now being finalised. It includes 50 different recipes on fungus, some from his grandmother and his mother.
Mr Royal says now is a good time to gather pikopiko fern tips from the bush.
